Surprise Gushers

Post #1 by brhenrio » 2 years ago

A few months ago I made a belgian quad, with wlp 530. I missed my mash temp low and wound up with a very highly attenuated beer. I assumed because the gravity was 1.006 it was done. And for 3-4 months I was right. Now I left this to age through the summer in my basement. I cracked one open and sprayed my whole kitchen. It was room temp as well. The next day I tried another one. Same thing. Tried what was remaining and it tasted metallic and hot. No glaring in your face infection taste. To make things weirder I gave one to a buddy who tossed it in his fridge and he said it was great. I gave this to him about the same time i had my last one which was in June and it was green but no other problems. I am really glad I keg now.
I'm going to toss one in the fridge and see if the same thing happens when it's cold.
I am just curious why carbonation was fine after two months in the bottle but now after four months it's gushing.
I hope this beer isn't ruined, but if it is I can deal with it.

What was your volume level when you added priming sugar? I have went as high as 3.00 in my triple's with no gushers, but never open them warm. That may be the issue.

I aimed for 3.0. Used white table sugar. Weighed using a scale. Probably the warmth is the issue. I guessed at beer volume however.

Opened up a cold one today. Gushed but didn't hit the roof. Not sure if I have an infection or if I just over carbed.
