Most induction stoves and hot plates come with a magnet that you can stick to your pot to see if it will work.

Our stove only has one induction element, but not so sure it would be powerful enough to heat 5 gallons of water to boiling

Not sure what would be needed for wattage, but I have seen 3500 and 5000w burners on Amazon.ca. Not cheap mind you.

I'll do some reading up on what you did. I need to step up my brewing before i drop a lot of cash on equipment.
