I made 2 one gallon stouts that last couple of days. I used Mauribrew 514 yeast ( 500 gram brick ) which Canada Malting gave me before they closed in Peterborough. It was 2 years out of date. I didn't rehydrate it, so I added 20 grams to each jug and waited to see if it would work. It did work!! Crazy activity though. I lost 25% to the blow off bucket. The thing is, they seem to be done after only 2 days. Is this normal for a 1 gallon recipe, or did I just use too much yeast?
