Planning to brew up a cucumber saison for the summer on Friday, regular saison hopped with citra, with 1 gal of juiced up cukes in the secondary.

I am hoping for a nice refreshing summer brew with hints of citrus and tropical fruit from citra, and lot of cuke flavour from the cukes :stirpot:

Here is my recipe so far, going to use chinese rock sugar that I got dirt cheap at an asian supermarket instead of clear belgian candi sugar.


Batch Size (fermenter): 5.25 gal
Estimated OG: 1.050 SG
Estimated Color: 4.7 SRM
Estimated IBU: 24.9 IBUs
Boil Time: 90 Minutes

30.00 g Citra [12.00 %] - Steep/Whirlpool 0.0 m Hop 6 0.0 IBUs
1.0 pkg Belgian Saison III Yeast (White Labs #WL Yeast 7 -
1.05 gal Cucumber (Secondary 7.0 days) Other 8 -

This one got delayed a bit due to lack of empty carboys, but I will brew it up next weekend for sure!

Cucumbers smell great and beer tastes awesome....how can it go wrong!

Adding the cukes to the cucumber saison

4 english cucumbers, 99 cents each.

Cucumber slurry (cukes, water, and campden tablets), stored in the fridge for 24 hours.

24 hours later, slurry added to carboy and saison racked on top, the beer has a nice hint of green.

I kegged this recently, and it is carbing up. Gravity sample was interesting, the tartness from the saison yeast and the cuke flavour reminds you a bit of gurkens or sweet pickles. Can't wait to taste it cold and carbed up.

Hey! how did this turn out? I'm planning on brewing up a saison this week and i'd like to give this one a try! all your feed back on would and would not have done would be greatly appreciated! :cheers:
