I just finished my first multi step mash (20min at 104 , 30 min at 140 and30 min at 155). Hit my times and temp right on , didn't check my phone until after my beta rest and it was a little low. Added some calcium carbonate and brought it up to 5.5 (at room temp) then proceeded with alpha rest. Long story short my og was only 1046 , I was expecting 1055 bases on passed experience with single temp mashing . Would the low ph (5.2 at room temperature) be enough to cause the issue, Or is it another problem?
