Well I filtered and bottled my first wine. yay. The Mosto Italiano Chardonnay I was perplexed as how to lightly oak has turned out extremely bitter. So I dumped a bottle of Vinarom into it; I hope the bitterness ages out because it's quite bad. Like someone dropped an elastic band in the carboy. 375ml of the Vinarom only seems to have subtlety doused the bitterness. I did keep the ferment process at specified temperature. I don't ever recall buying chardonnay that bitter(?) so I'm a bit disappointed
