Wyeast Diacetyl rest

Post by Max »

I am using a Wyeast 1968 London ESB that came with a Paddock Wood stout.
I see in the Wyeast comments that "A thorough Diacetyl rest is recommended after fermentation is complete".
What does this entail exactly within the context of the Paddock Wood Kit?
Max.

It just means, in a few words, leaving the beer on the yeast and raising the temp so the yeast can clean up some off flavours. Moreso used with lagers. I have never felt the need to do it unless the beer finishes really quickly.

Tap 1: Puck that Filsner; Berliner Weisse
Tap 2: Not a Pill; Lager
Tap 3: Paddockwood Kolsch
Tap 4:
