Fermenting in wine fridge - temperature question

Since the ambient temperature in my home is quite variable, I've decided to experiment with fermenting beer in a 3 gallon carboy in a wine chiller fridge. However, I can't adjust the temperature of the fridge to go above 14 degrees celcius. This is pretty low for fermenting an ale, but I know fermentation produces a lot of heat, so many it could be perfect for those initial 2-3 days of intense fermentation? I've always read the temp in your vessel could shoot up 5 degrees C compared to the ambient temp of the room around it. If this is true, and the fridge were set at 14C, then the beer would be fermenting at an appropriate 19-20C.

Does my logic make sense? :D

In a way yes, but the heat the fermenter throws off will keep the fridge cooling until it gets to 14 C won't it? A cheap temp controller like a STC-1000 will do the job.

I'll take a look at that, thanks!

In the meantime, I'll try fermenting it this way. It's a black ipa with us-05 as the yeast, and I've read optimal fermentation temps for this yeast are between 54-72F so I think it should be okay. I guess we'll see.

My batches have consistently given me 3.5 gallons post boil, so if I have to put the remaining of the wort in a half gallon carboy since I'll be fermenting in a 3 gallon, I'll try experimenting with some galaxy dry-hopped black ipa for the .5 gallon :stirpot:

Yes the controller is 12v power but the relay is 120v 10Amp

Yes the controller is 12v power but the relay is 120v 10Amp so all you have to do is run a separate power supply to terminal's 3 & 4 with 12 volts and 1 & 2 will break the 120volt to you fridge/freezer
